For the Chicken Masala:

Spices:

Chili flakes – 1 tsp

Red food color – 1 pinch (optional)

Tamarind pods – 5–6

Dry fenugreek leaves (kasuri methi) – 3 tbsp

Lemon juice – 2 tbsp

Salt – to taste

Oil & ghee – as needed
For the Rice:

Salt – about ½ tbsp per 6 cups water

Oil – 3–4 tbsp

Ginger garlic paste – 2 tbsp

Black pepper powder – 1 tbsp

Whole spices – bay leaf, cardamom pods, cloves, cinnamon stick, star anise, shahi jeera (caraway seeds), mace – to infuse the rice water
🔥 Method: How to Cook Chicken Biryani

Cook the Chicken Masala
In a pot, heat oil and ghee. Add ginger garlic paste and sauté. Add chopped tomatoes, yogurt mixed with biryani masala, and all the spices listed. Cook until the masala thickens and the oil separates. Add chicken and cook until tender. Add potatoes and green chilies, letting them cook with the masala. -
Boil the Rice
In a large pot, boil water with salt, oil, ginger garlic paste, and the whole spices. Add soaked basmati rice and cook until it's about 70–80% done. Drain and set aside. -
Layer the Biryani
In the pot with the cooked chicken masala, spread a layer of partially cooked rice. Top with fried onions, fresh mint, coriander leaves, and a pinch of red food color (optional). -
Steam (Dum) Cooking
Cover the pot tightly (use foil or a heavy lid) and cook on low heat for 15–20 minutes to let the flavors blend and the rice finish cooking.
